Eid Special

Since I wont be able to bake the infamous Sarawak's Layered cake for Doha peeps for this coming Eid, I tot I'd share one of the best recipe that I've tried (and agreed by many as super yummilicous) complete with some guidance on how to bake. Hopefully you'll enjoy trying it on your own.. here goes;

The Recipe: Ninja Turtle layered cake

::The ingredients::

15 eggs (gred A)
380g of fine sugar
380g of flour
80g of corn flour
230g of instant milk powder
500gm of butter
1 tablespoon of ovalette
1 tablespoon of butter essence (in my case, i replace it with vanilla essence)

::The How To::
Bowl A

Beat the egg till fluffy, add in sugar, and beat well.
Put in ovallete, mix well.
Add in corn flour, instant milk powder and flour and mix well with low speed.

Bowl B

In a different bowl (bowl B), beat the butter till fluffy. (It is important to beat the butter separately to ensure a super-moist end product ;) )
Once the butter is fluffy enough, add into bowl A. Mix well then add in butter essence.

Now, divide the batter into 4 different bowls of a same size. On each bowl, add in your own prefered colour, in my case; blue, red, yellow and chocolate (i use chocolate emulco; to add a sense of chocolate taste)
Use a 9" x 9" tray, cut out a grease paper to fit. Then smoothen some butter onto the inner surface. Next, take a spoonful of the chocolate batter and put one on every corner and lay them around the tray like picture below;

Bake in a pre-heated oven (Top flare only). As far i as learned, it is recommended to use a gas oven rather than electric, and there's no telling on how long to expect for each layer to be done. What i did is, i'd see if the layer's surface is thicken and is not bounchy, then it is done.. (this is why it is better to go through practical class than reading through simple manual like mine.. hehe). But for those who already familiar on how to bake layered cake, this shouldn't be a problem after all~ ;) One useful tips when using gas oven is to put some water in a heat-resistance bowl while baking in it; to prevent over-heating and to maintain moisture.

Keep on layering and baking for each alternate colours until you reach the top tray. Well.. to tell you the truth the ninja-turtle part is when you make a diagonal layer of each colour at the middle of the cake; so you'll end up with a beautiful designed-layered cake; which I completely ignored, as for me, the taste that mattered.. hehe.

Sarawak Layered Cake

This is my very first attempt of Sarawak layered cake on my own after attending the class. Ninja Turtle cake as my techa called it. It didn't quite look 100% like the supposed-design i figured, but good enough for the first trial, and moreover, the three hours effort are all worth-it as lots of my friends-comes-guinea pigs complemented the taste ;)

I just came back from basic photography class, and didn't have that many time before going to Leng and Leine's Hawaiian birthday party. So the cuppies brought for them are as simple as it can be. ( I wish i could have more time to do the deco, i was thinking about hula girls n stuff.. but what to do, time-constraint.. mebbe some other time..) But anyway, the tots that count rite? ;)

The how to: make cupcake base

Hiya, sorry it took so long to update.. hehe, you know, this stay-at-home-mom thingy is quite new for me, i so need to learn more on time management and stuff! hurmmm.. anyway, back to the subject;

Today am gonna share the recipe for the cupcake base. Yup.. as you can see, most of my cuppies are all lied flat, because this way you can be more creative in terms of what to decorate on top, but if you like the typical swirl-type cuppies, go ahead and do as you please, i'll show all sort of different design some other time k ;)
So, basically, get your well-baked cuppies and get ready to lay buttercream base on it;

Recipe: Base for cupcakes (and yess, you can use it for a cake too)

BUTTERCREAM base

::Ingredients::

500g creamwell/krimwell
200g shortening
150g butter
1 tin of condensed milk
Flavour - i don't use any, and still yummilicious

::Methods::

Mix all in except for condensed milk. Beat till fluffy before adding the milk. Beat well till creamy. If you are a sweet-tooth, go ahead and add more icing sugar..( but believe me, this is sweet enough! just the rite taste ;) Yup.. you are done when you got something like in the picture.

So, once you got this done, all you have to do now is to lay it on the cupcakes top (yes, this is the reason why we bake the cuppies half-full). Then use a small scrapper (the kind on the pic) to smoothen the surface, oh yeah.. this is the part where your design should be considered, say you wanna make a pink background, add in some colours to your buttercream- mix well, then smooth them onto your cuppies, by scrapping it in one direction and you are done (at least for the first part..)

Hope you enjoy it, as much as i do.. now here's some useful tips: the buttercream can be use up to a month if you keep it in the fridge. ;)

The how to: bake cupcake

It has been a quiet week. I have been resting well since my last order, and nothing new has turn up yet.. oh well, now that i have all the time in the world (not that i have that many..considering the chaotic hours with lil Myra- oh yeah, she's my daughter, the very reason for my cuppies name ;) ) I could finally concentrate to write on the 'how to' post.

First thing first, I am neither a chef, nor that I'm an expert at baking. I started to learn baking/decorating like 2 months ago while waiting for my hubby to settle off our resident permits stuff to get us to Doha, bla bla bla. It has never occur to me that I'll be enjoying it, let alone to be good at it! (but then again, it is not that hard!!) And.. the truth is, I'm a bit lazy to bake, i secretly wish i could just decorate sets of well-baked cupcakes everytime i got a new order (which are not that many afterall!!!!) hehe.

So, after my 4 hours crashed-course in Bangi (my sifu didn't even taught me how to bake! she just showed me what's what in cuppies-deco, and some hands on!); but... i just tot I should share my on-going knowledge on the net for free (specially to those kind enough to visit me blog ;)

How to bake cupcakes (well actually this part I will just write down the recipe as i've forgotten to snap any pic everytime i bake cuppies! there'll be more for deco stuff, promise ;)

Basically, the only recipe that I've got from the class is chocolate moist cupcakes, so I've been using it quite a lot. Tried with cheese cake, and it's not too bad too.. so here's what you need for chocolate moist cake;

Ingredients;
2 eggs
1 ½ cups castor sugar
2 cups of pre-shifted flour
1 cup of corn oil
½ cup cocoa /chocolate powder
1 tsp the soda bicarbonate
1 tsp baking powder
1 ½ cup of evaporated milk
½ tsp vanilla

Methods;

In a mixer, beat the eggs well. Pour in the castor sugar and mix well. Add the corn oil.
In a different bowl, mix the flour, cocoa powder, soda bicarbonate dan baking powder and shift them through.
Add in the shifted flour with the evaporated milk into the mixer -a spoon full at a time.
Add in vanilla. Mix well.
Put half of the batter into the paper cup, and bake with 150oC for 10-15 minutes. (The truth about my baking experience in Doha was I didn't even have the electric oven with temperature! So, what i did was to bake with whatever temperature the gas oven provides, then after sometime, i'll stick in a stick and pull it off, if there's no residue, then you are done! (Ok, ok I know it is quite confusing without visual.. I'll post some up when I snap some pic for my next baking sensation! Please help to remind me! hiks..)

Hmm.. didn't think i could pull this off. But I guess once you let your imagination went wild, anything is just possible. I woke up at 5am to start on Nanie's yet another project. This time she asked if I could make a whole cake for her son's birthday, just for the family. So, i guess this is my first official whole-cake order.. And No.. I didn't use a sonic-shape-mold, i just cut the cake into it's shape. ;)

By far, my favourite set of all... ;) .Tiffany in 1 oz cupcakes surrounding 1 big cuppy for birthday celebration.

The order is to make individual cupcakes for 3 gals and a whole cuppies set to wish them happy birthday. While considering the theme of the party- Red and Denim, i simply use buttercream to draw the rest.
